Meza, Bosnian Cuisine

Mediha Goretic

My Story:

Cooking Bosnian food reminds me of my identity and traditions. It brings me back to past events and happy moments with my parents, grandparents, family, and friends. Both of my daughters, in addition to enjoying Bosnian food, love to play Bosnian music when I am cooking. The smell of the food and music create connection with our family in Bosnia. It is now our new tradition to listen, sing, and dance with Bosnian music while cooking.

My first lessons about cooking with various flavors, I learned from my mom, grandmas, aunts, and cousins. I spent a lot of time in my childhood on my grandparents’ self-sufficient farms. There were often large gatherings where I was introduced to cooking, harvesting, preserving, and storing fresh and organic seasonal fruits, herbs, vegetables, and meats. After decades, I still remember the smell and flavor of the food from my grandmas’ wood stoves.

Now, while being far from my native country, Bosnia and Herzegovina, through food, I want to share at least a portion of my culture and traditions.

My Food:

Bosna’s (Bosnian) cuisine, like its language, has a base of South Slavic culture and tradition, and has been influenced by many surrounding countries and far beyond.

A typical meal might be: Bosanski Lonac (stew with chunks of lamb, veal & beef with vegetables), Traveler’s Sataraš (sauteed fresh vegetables with lots of spices served over creamy rice), burek (homemade phyllo dough/pastry with beef, red onion), sarma (stuffed cabbagem leaves), and Šape paws (cookies). All dishes can be made upon request: Lactose-free, gluten-free, nuts-free, eggs-free, kosher, halal. Please visit mezabc.wordpress.com for more information.

Mama Africa Cuisine

My Story

My name is Said Bulle. I was born and raised in Jilib, Somalia. I grew up working in the kitchen with my mother at her restaurant. Shortly after my mother passed, I set for the long journey to the US. I finally came to America when I was 15 years old. My first jobs in America were working in restaurants. That is where I found the connection with my mother. My heart is set on having a family owned restaurant just like my mother did. I found my restaurant community at Manhattan Pizza downtown Burlington, VT. The owners have become like family. They provide guidance and are willing to support me as much as they can. I often utilize their kitchen space to fry chicken for big parties. In 2020, I started my catering adventure.

My Food

I focus on food that allows my new community to get a taste of my homeland food. I use Halal food and take time to let the seasoning soak in.

Typical event looks like:

Rice, some sort of stew, sambusas, fried chicken, salad, and a banana. I always offer a meat and vegetable option. I make my own hot sauce.
